Mindful Morning Fuel With Samsung

My favorite time of the day is early mornings. I’m naturally a morning person and typically have the most energy as the sun is waking up. It’s so important that I try to maintain that energy throughout the day, therefore, breakfast is of course my most important meal of the day. I’m working on really taking the time to create meals in the morning that help fuel my day. The first and most important step begins with the grocery shopping. I usually go straight to the organic produce section and choose ingredients that are real and good for me. I love storing them in my Samsung refrigerator, which keeps them fresh until they’re ready for eating.
One of my go-to mindful morning meals at the moment is an avocado toast with sauteed kale, a fried egg and a side of sweet potatoes and almond milk yogurt with granola. It’s SO good and beats the salty vs. sweet debate that I have constantly. It’s also super simple.
Cube the sweet potatoes, season with salt and pepper and heat for about 20 minutes at 420 degrees (thank you, Samsung oven for making mine so crisp). Meanwhile, toast your favorite bread, sautee the kale in avocado oil, cut up your avocado and fry an egg. I love the space my Samsung stovetop gives me and how fast it heats up!
Place it on your bread however you wish (in order, I place the avocado first, followed by the kale and egg). I top with salt, pepper and paprika. I then get my favorite almond milk yogurt and granola as a yummy side, plate it all and voila! The ultimate mindful morning fuel.
