Summer Dragonfruit Bowl
Now that summer is approaching here in Los Angeles (early, as usual), I'm just going to jump in and start sharing my favorite, refreshing summer recipes! First up, my Summer Dragonfruit Bowl. I cannot count how many times I made this delicious, beautiful bowl last summer. Want to know how I was inspired to make it? My trip to Bali the summer previously. I had soooo much dragonfruit- cut up, in juice form, etc. So, when I got home I was craving it badly. When I was walking in the grocery store one day I happened to see frozen dragonfruit packets and immediately purchased some. You can find them at various grocery stores, most likely in the frozen fruit section, close to the frozen acai packets. I typically purchase mine at Whole Foods. It's also great to buy the whole dragonfruit itself when it's in season and freeze it for your next smoothie or bowl.
Here is the (very simple) recipe... In a blender (I use Vitamix), throw in the following ingredients:
- 1-2 packets of frozen dragonfruit
- 1 scoop or packet of Vital Proteins Collagen
- 1 frozen banana
- 2 ice cubes
- 1 spoon of cacao powder
- 1 spoon of almond butter
- 1 spoon of cacao nibs
- A splash of almond milk
That's it! Promise it's realllll good. Drink it as a smoothie or top the smoothie bowl with your choice of toppings. I like to use fresh banana, berries, pecans, cacao nibs and hemps seeds. Enjoy!
